NO. We add a small amount before the grapes are crushed to limit wild yeast growth, we do not recommend adding any prior to fermentation.

Fermentation can last anywhere between 24 hours and 30 days depending on the type of yeast, temperature, variety and other factors like nutrient availability (yeast available nutreint). Typically, if after one month, fermentation is not complete, give us a call and we can try to determine the problem.

Potassium Sorbate regulates the growth of yeast and prevents further fermentation, and MUST be added if the wine is sweetened prior to bottling. You also need to add Potassium Meta-Bisulfite as well to stop bacterial fermentation.
